Flavourful Whole Green Olives in Brine

Olives that are harvested in the first days of October when they are still green.
They are preserved in brine for about 8 months, after this period the olives have a characteristic bitter aftertaste that makes them very appreciated.
Very good for typical Calabrian appetizers based on local meats and cheeses.

Ingredients: whole green olives, water, salt, spices in variable proportion (chili pepper, garlic and fennel seeds), acidity regulator: lactic acid.
